Any left-overs also go very well with a Baked Potato for a lunch option.
Or buy some large soft tortillas. Get a round dish that the tortillas will fit in. Put a tortilla in the bottom, a layer of chilli, then a good layer of cheese (mozarella is excellent, but cheddar would be OK if that's what you've got) then a tortilla, chilli, cheese, tortilla, then cheese on top to finish. Bake in a medium-hot oven until the cheese on top has started to brown a bit, the whole pie is heated through and the cheese in the middle is melted. A crowd pleaser, particularly popular with kids. |  | | |
