A few tubs ready to pull out and then 'flavour' accordingly as and when. You know, as a base, so I can say, add a tarka if I like, or make a dhansak, or a samba whenever. Just a cube of ginger and a little turmeric in the the base maybe.

Definitely space, they clearly don't mind a bit of cold. They probably want similar condition to cereal crops. I always thought of them as a warm weather crop probably because they're so associated with Indian cooking.
