Vegan Lunches 10:00 - Oct 19 with 6952 viewsHarryWright

So i'm giving this Vegan thing a go for minimum of a month to see how it goes - Quite interested in the health benefits of it and want to see what effect it would have.

One thing i'm struggling with is food to prepare then take to work and eat cold as most recipes seem to be if you're cooking them there and then.

Anyone got any suggestions or even sites I could look at to give me some ideas?

Wholemeal pittas
Pizza sauce - Sainsburys/Asda both do decent ones with no added sugar
Vegan cheese - Callis will be able to advise
Veggies of your choice

If you want a bit more protein add some Quorn vegan pieces.


Quorn gets plenty of stick on here but it's very good IMO. It's not soy based either unlike most vegan products.

There's loads of salads you can make in big batches. Tabouleh is great and will keep for a few days, caponata is also good. They're filling and tasty, you can always supplement with some bread if you want extra carbs.

Yup, salads:
tabbouleh, loads of lemon and parsley olives and capers and whatever,
Brown rice and black beans and roasted peppers etc
bulgar wheat, cashews, spinach, flame raisins etc
homemade humous (very very easy, takes less than five minutes to make loads) in wraps with whatever you got

Make chilli

In general get yourself in loads of pulses and grains like bulgar wheat, couscous, tabbouleh, orzo (not sure if that's vegan, I'm not one, just vegetarian mostly. also not sure if all those things are grains. well they definitely aren't.), and loads of stuff like olives, capers, sundried tomatoes

We grow loads of parsley in the garden, mash it up with hazlenuts and oil for pesto, lasts ages, is delicious and much better than the rubbish tiny little jars you get from the shops.

Why not? Far more nutrition in that than most people get in their lunch. Plenty of fibre, vitamins and minerals especially if he adds veg. The pizza sauce is pretty much tomatoes, herbs and onions. When I make it I have half fat cheese instead of vegan cheese. That adds plenty of calcium and protein to the mix as well as other micro-nutrients.

Well done for giving it a try, I will be doing Veganuary again next year, its a challenge but with a bit of planning it becomes easier than you think.
