Well, you can make a very passable Sweet chilli sauce by boiling some Strawberry Jam, some ketchup and some dried chilli flakes together for an hour or two. That tip from my trained chef mate. Just get cheap "basics"/"value" jam and ketchup, equal quantities, chilli flakes to taste and some water if it looks like it's getting too dry. |  | | |

Lemongrass
Chilli
Coriander
Lime leaves if you can get them or zest and juice of a lime
Fish Sauce (optional, and only a little)
Coconut milk (a tin is fine)
Some people like a hint of sweetness: a teaspoon of sugar, or jam, or a dash of honey.
Add some Basil at the end. Thai Holy Basil is amazing, but hard to source. Regular Basil is ok. And lots more fresh coriander right at the end.
If you use fish sauce you almost certainly won't need more salt. If you don't, you will. Taste and season before adding the basil and coriander.
Sounds a lot of work, but pretty fool proof. Can be done without the coconut: maybe in a tomato base instead.
Bonus tip: Don't be afraid to add splashes of water to a stir fry to steam fresh vegetables! [Post edited 7 Dec 2017 11:34]
