There was a wonderful place between St Peter Port and St Sampsons, called The Absolute End, specialist fish and seafood. I used to get there with clients 2-3x a week. They even personalised a starter for me, calamari fritti "vindaloo style", in hot butter, lots of garlic and a few chopped incendiary chillis. I had it every time! The dish existed after an episode at a different place ... There was a seriously upmarket hotel / restaurant, La Frégate, which was just too serious to be comfortable (for me). On one occasion, everyone else decided to go with lobster, which I had never had in the state where you have to attack it. "How would you like it, Sir? " came the embarrassing question. I had no idea how to answer. I thought, quickly. Grilled? Roasted? Deep-fried in batter? I found my voice and confidently requested "vindaloo?". It didn't go down well. And I didn't get it. But later that week, we told the story to the Maitre d' at the aforementioned Absolute End, who was delighted to oblige... [Post edited 23 Jun 2020 20:42]

For a 'curry', assuming we're talking cooking in a sauce, you need something that wont fall to bits, monkfish being an obvious example. Edit: another shout out for kedgeree too., although I tend to poach the fish in milk rather than bake it, but either/or is all good. [Post edited 23 Jun 2020 18:47]

Although Keralan/Goan fish curries are a great shout, the very best must be from Thailand, no? I do agree with fishers though, in that I wouldn't get one from an Indian restaurant really. If it's not a big seller, don't order - quality questionable. |  |

The nicest fish I've ever eaten was black pomfret in Penang. That's not something you see on a menu here every day, but I guess there's some nicer places in those city types set ups. I've not spotted it on the fish and chip van's offerings anyway. |  |
