You could have a system whereby when a defender gets to 2 metres from the man with the ball, they stop and roll dice to see if the tackle succeeds, swap possession if it does, then carry on. The Ref could even have a chart which gives different results - clean tackle, foul, red card offence, etc. With special modifiers for using orcs.
