Yes exactly, it’s good to do it over a night heat so that the stock reduces before the sprouts are over cooked. Red currant sand almonds a good addition also. As you say, works well for lots of veg Especially carrots! | | | |

We only all grew up hating them because our mothers had learned from their mothers who had this thing about cutting a cross in the bottom of the things before then dropping them into boiling water with enough salt to pay a Roman army. Then either turned into mush or served almost raw depending on their own tradition. You're too young to remember when pressure cookers hit the scene but most households were obsessed with them and everything went in and came out tasting of very little. Not saying they're a bad invention, just it was quite a leap from the boiling pan to one of those things. | |
