My hipster mate spent £600 on some fancy contraption and swear by it, but I always think coal and half barrel design is the best. Lemon and oil in equal amounts, fresh rosemary and sage. Shake it in a jar until it emulsifies and you get a brilliant mixture for basting onto chicken. Like you good quality thick burgers and sausages. Halloumi and aubergines for the veggies. Spiced and fresh herbs out of the garden to taste. Loads of Greek and middle eastern sides and salads and let people get into it all. Two trays of potato wedges out of the over with some feta crumbled in or smoky paprika on always goes well too. Proper jerk or piri piri chicken is also brilliant on the coals in my opinion. But you have to get the spice right for your guests as I found out the hard way. |  |

Coal? How heathen. I have a solar-powered grill smokehouse and only use European Beech wood chips from northern Sweden, of course, as they impart a particularly delicate smokey flavour. Which is perfect for a couple of Argentine Châteaubriand steaks lightly seasoned with hand-harvested Himalayan pink sea salt. Er, no I’ve got a kettle bbq too and use a bag of charcoal from the garage. Has to be sausages and burgers and mixed kebabs with lots of roast veggies too. The other half likes halloumi kebabs. I’m also partial to a fresh caught mackerel steamed in foil, but haven’t been fishing yet this year and they’re probably not in yet anyway. Last year I cooked a roast chicken on our kettle BBQ - stuck an upside down roasting tray in with the coals, so they’re only around the edges for indirect heat. Stand the chicken up on a can of beer up its bum, lid on and leave for an hour or so. Bloody lovely it was. [Post edited 24 May 11:04]

When I contacted him on Friday, he said it was bitterly cold and he was wearing four layers of clothing. Whilst it might have improved a bit since then the "feels like" temperature is well below the actual temperature. Incidentally, he had planned to move back to Aberdeen when he retires, but having been there in January during the three week period with no sunshine, he's decided that's not a good idea. Perhaps the only point of a BBQ in Aberdeen is to heat people up as they crowd round it. [Post edited 24 May 11:29]
