I know there's a lot of cooking enthusiasts on here so should be a decent thread. What's everybody's favourite dish to cook?

I'm certain I make the best tag bol, but I appreciate that it's a pretty easy dish to get the basics right.

More creatively I like to cook a tartiflette for people as it usually goes down well (as long as the recipient likes cheese).

Being female and having to cook mosts evenings, I don't actually have a signature dish.

I make a mean fish pie, a great lasagne, my cottage pie is to die for (not literally!) and my paella aways gets great comments. I always make extremely good roast dinners as proven by the amount of times my grown up children come back home for meals!

I am not so good with 'hot or spicy' meals as I don't enjoy them myself so if Mr BB wants 'hot' he has to wait until we go out for an Indian meal where I will have a very mild meal.

No, but I've been to other parts of Spain and have been converted to Hake over Cod.

Much more sustainable and slightly sweeter. And cheaper over here, too.

Galician Octopus is one of my all time favourites. Fresh, simple, delicious!

Eel and horseradish is great, as is mackerel and horseradish. Actually I think mackerel is now my favourite fish.

I really admire a man who will do that. A lot depends on time of course and as I have more time than Mr BB I am in charge of the cooking.

My son does most of the cooking in his household (taught by me, of course ).

Very fresh mackerel is beautiful. It also takes warm spice like cumin quite well.

Note to the inexperienced (not you, Lucan): "yellow sticker" reduced fresh fish in the supermarkets is rarely a bargain, and never more so than with mackerel, it doesn't age well.

Stir Fry - ingredients will vary to whatever is in the fridge and needs cooking or chucking, ideally with some meat marinated in wine, plenty of onion, corriander and tarragon and when I'm really drunk grated cheddar cheese

Very minimal use of mushrooms in chilli, they're not overly important & if I don't have them it doesn't matter but I like loading stuff with as much veg as possible.

But you're not going to defend that shrivelled salt cod thing they have going on, surely?

We haven't mentioned big, fat, juicy hunks of tuna yet, either. J2 would probably want them well done...

Whenever I go to Spain I always just go and stare at the fish counters, or say the fish landing market at Santa Pola. I find them mesmerising.

I'm quite partial to a bit of pato humado, too, but a bit freaked out by the "skinned-but-whole-with-bulging-eyes" rabbits in a plastic bag that you find lying casually next to pork chops in Mercadona.

Off to Alicante in April... can't wait!

I have to say that your chilli on NYE was one of the very best I've had, and I don't think it was just the booze speaking.

My ex wife was a cracking cook and cooked every meal so when we split the first thing i did was a basic culinary course in the evenings. Would recommend it hugely, been with my gf just over two years (although she claims its three years because we have had three xmas's together grrr) and she cooks during the week and at the weekends i come alive in the kitchen. There is nothing that fazes me or i will not at least have a go at cooking.

Favourite has to be:

Mustard Mash Potatoe
Carrots and Asparagus

I did a family meal a couple of weeks ago and was chuffed with that:

Dhansak
Lamb and potato curry
Jalfrezi
Pea, mushroom and paneer
Cauliflower in coconut
White cabbage, shredded carrot and mange tout
Skewered lamb
Onion, cue and tomato chutney
Scented rice
Couple of raitas

Cheated on chapattis


Very nice.

Dhansak is my speciality too.

Normally with lamb.

The lentils need to be soaked/blended until they're unrecognisable to pass my requirements.

I never have rice either, I opt for Sag Aloo instead.
