Very fresh mackerel is beautiful. It also takes warm spice like cumin quite well. Note to the inexperienced (not you, Lucan): "yellow sticker" reduced fresh fish in the supermarkets is rarely a bargain, and never more so than with mackerel, it doesn't age well. | | | |

Me. Very minimal use of mushrooms in chilli, they're not overly important & if I don't have them it doesn't matter but I like loading stuff with as much veg as possible. | |

But you're not going to defend that shrivelled salt cod thing they have going on, surely? We haven't mentioned big, fat, juicy hunks of tuna yet, either. J2 would probably want them well done... Whenever I go to Spain I always just go and stare at the fish counters, or say the fish landing market at Santa Pola. I find them mesmerising. I'm quite partial to a bit of pato humado, too, but a bit freaked out by the "skinned-but-whole-with-bulging-eyes" rabbits in a plastic bag that you find lying casually next to pork chops in Mercadona. Very nice. Dhansak is my speciality too. Normally with lamb. The lentils need to be soaked/blended until they're unrecognisable to pass my requirements. I never have rice either, I opt for Sag Aloo instead. | |
