We haven't scored a hat-trick in a domestic cup match for almost 33 years. That seems like an awfully long time not to have done so.
The last was by Bontcho Guentchev on 13th February 1993 in our 4–0 FA Cup win over Grimsby at Portman Road (5th round).
Funnily enough, the two hat-tricks that preceded that one were also in the cups (Kiwomya vs Wigan in the League Cup in October '92 and David Gregory vs Watford in the Full Members' Cup in November '89).
