When a colleague says 'I'm popping out to get a sandwich if anyone wants to come?'.

Just as you're considering popping out for a sandwich. So you then have to claim you're busy / not hungry and leave it a reasonable amount of time before you can go and get your sandwich, on your own, and not have to speak to anyone on your lunch break.

Or maybe I'm just really unsociable.

No, I'm with you. Lunch is for a bit of fresh air or a few minutes reading time, no need for other people on either.

It’s important to have some separation with work colleagues, to not be too familiar and remain professional at all times. Unless they’re hot of course.

I found a nice quiet little spot at work for lunchtime, I'm sure everyone thinks I'm a bit weird sitting on my own here, not that I'm bothered one bit, but now a work colleague has decided to bring his chair and join me, don't get me wrong I do like the guy but this was my place to escape with my own thoughts and doom scroll for half an hour in peace...oh well..
