The UK will have to rely on seasonal veg.
Carrots, sprouts, parsnips, swede, turnips, cabbage.

That's a yummy selection.

Alternatively, a quick trip to Iceland to stock up with frozen veg in October.
Sweet corn, peas, broccoli, roast spuds etc.
