Using clotted cream as the butter is madness. It is meant to be dolloped on, therefore must go after the jam.

Well, depends on personal taste, but there is an element of science behind putting a layer of fat (cream / butter) first as it affects the texture and flavor experience

When you spread cream first, its thick, fatty texture creates a smooth base that helps prevent the jam from soaking into the scone too quickly, maintaining moisture and providing a richer, creamier bite.

However if you spread jam first the sweetness and stickiness seep into the scone more readily, with the cream added afterward creating a layered, contrasting more sugary texture.

Generally those with a "sweet tooth" will likely prefer Jam first . . .


simpler than that, if you pronounce it 'scones' then it's jam on first, if you pronounce it "scones", then cream first.

I think it depends on the consistency of the cream compared to the jam. If it's clotted and thick then that's first but if its more whipped or fluffy then I'd go jam first.
