For the former, there are overlanding companies that operate in West Africa which would be a hell of a trip. 3 week minimum, best time is the spring before the rainy season.
If relaxing, plenty of tour operators sell packages to Gambia. There is a whole sex tourism thing going on, German grannies with young lads on their arms.
Independent travel, Ghana is pretty cool. Stayed at Labadi beach though the posh hotels have shot up in price as oil execs / workers seek accomodation. Real shame as you could get 5* accomodation for under $70 a few years back, was 5 times that last time I checked.
If you do Ghana then Elmina is lovely too. Really cheap resorts there for silly money ($25) private room looking onto the ocean. Coconut grove my fave, but this was 20 years ago so might have changed.
Freetown in SL was a popular spot with amazing beaches, not been but know many who did.
