If my grandmother was alive she would be nearly 140. Talking about lost skills. From what I remember she used a kilner jar, layered salt and cut beans, starting and ending with salt layer. Can remember she wrapped the kilner jar in brown paper, no idea why. Trial and error is all I can suggest.

The beans may well have been par-boiled first.
The brown paper would be to keep light off the beans to prevent discolouring
