Tied noodles are common in hotpot, otherwise they can end up everywhere. At my local hotpot they are called Konjac. Googling this suggests it is made from the Japanese Konjac Yam and the noodles are also called shirataki noodles in some restaurants. Other noodle types, like udon, which aren't tied, are typically consumed at the end, meaning they don't need to be tied. They are also thicker and easier to pick out when they are everywhere |  |

Shirataki noodles. Can also be called konjac noodles. They sell them in knots in some places. Like Newcy said, a local Asian supermarket is probably best. I do just have to ask though, what did you like about them? How did they cook them? Was it not like chewing on elastic bands? |  |

It was a beef hot pot. All the ingredients were really basic but I just want to recreate it. The noodles were nice actually and apparently not bad for you. It had beef, cabbage, tofu, noodles in a nice broth. Wow it sounds bad now but they charged £32 for it! First time I've liked tofu. Really sucked up the broth. |  |
