If pushed, I'd probably go more runny, for it's adaptability - drizzling over parsnips, carrots, onions etc when roasting. It also sinks nicely into freshly buttered toast and of course, as a sweetening agent in porridge.
But I also like set clover honey on toast too.
However, not an ideal delight for a diabetic.

Hmmm. Set is what I would put in as an extra to something like hot blackcurrant and port if I have a slightly sore throat/cold that needs soothing, as opposed to a sachet of lemsip.
