On the A1 I noticed a sign for the village of Stilton on the Cambs/Lincs border, so thought I’d stop and buy a lump of my favourite cheese direct from source. I bought some and was advised by the happy cheesemonger that Stilton Cheese is not allowed to be made in Stilton BY LAW! The cheese was historically made by communities from the nearby counties of Nottinghamshire and Leicestershire and taken to Stilton to sell as it was a long-standing North/South transport hub and therefore a busy commerce hotspot. However… due to Brexit and the resulting abolition of certain trading laws, Stilton will soon be able to produce their own blue veiny magnificence and use their own village name. Maybe so but that link actually states… “At present, EU law only allows Stilton to be produced in Leicestershire, Derbyshire and Nottinghamshire, where it thought the cheese originated.” That present no longer exists, though 🧀 Anyway, I’ve consumed what I bought and it was lovely, wherever it was from 🙂 |  |

I had a Lancashire Cheshire cheese with a burp of Heinz sandwich spread on a nice white soft roll at lunch time and it was lovely. Not too strong or as crumbly as your usual Cheshire, it was full flavoursome lovely. Back to the point in hand I love trying different ones. A good blue cheese or stilton is hard to beat. Crumbled onto a well toasted crumpet you have a poem of delight for breakfast. Cracking on a burger too. But really, your desert island cheese of choice has to be a good, strong cheddar. Whether a hunk gnawed on its own, with stuff, basic cheese sandwich, mixed in with mash, pizza topping, anything topping, clod with other stuff, it never disappoints. Ahh, I love cheese. Edit: honourable mention to proper Red Leicester. Of the foreign stuff, a good Camembert is lovely and I like Brie too. [Post edited 24 Mar 2023 23:16]

It is very strong with a lovely crumbly texture, flavour strength 7. Probably the strongest cheddar I've tasted, even stronger than the Snowdonia Black Bomber cheddar. |  |

The blue cheese producers of Stilton have used the earlier name for the village, Stichelton, to sell their cheese for quite a few years now. It was a monumental f up that the Leicestershire cheesemakers were able to have the boundary drawn round their country, and exclude Stilton, in the first place. I don't know who would have been responsible for the application for DOP status, or why the Cambridgeshire Blue Cheese makers of Stilton Village didn't object at the time. But whichever side of the border it is from, when nicely ripe it is a gloriously addictive cheese.
