I cook it, as in a mirepoix, and yes, will add it to ragu, gravies, and as you say things like cottage pies and pretty much most things that require a little sauce. But not in chunks. Celery is also a core component in authentic Italian sauces. I believe Celery, Onion and Carrot are the go to veggie cornerstones of a good meat sauce. That said, raw celery is w*nk. |  |

I love beef but am wary of it now. My first gout attack was following a 3 day binge on a large tomahawk that was on offer from the usual £35 to half price. It was lovely but then I couldn't walk for a week. Dunno. I have lamb but obviously that's not going to be better is it. My lump is weighing in at 10 kilos, I'll give it a 20 min sizzle on gas 9 and then turn it down to gas 3 and cook it for 20 mins a kilo - before resting it for minimum 90 mins. My wife will only eat the end because she is a heathen but everyone else will tuck in like mad men and women - except RKD who will be eating nuts and green things. |  |

Mother never rested her meat joints, she thought they would go cold, she is a bit of a mentalist. She asked how long to cook beef once as she was having a big Christmas dinner and she was in the habit of unintentionally overcooking it. I told her the times but she didn't let it rest and by all accounts on carving it was like a blood bath. |  |

That sounds good. I was in Puerto Banus once with a supplier and some of his Spanish friends. They took us to a little restaurant off the beaten track and they only cooked lamb. One of the Spanish bods was a wine supplier and he kept recommending different reds. It was absolutely brilliant, fantastic day all round. RIP Rup and Jesus |  |
