I'm cooking beef this year thanks to democracy in our house, also means we can have batter puddings without the weirdos getting upset. Plus Turkey only seems to work if you have loads of people / want to eat it for weeks after.

However, if it was my choice we'd get something like venison or goose from the local farms up here. Apparently the December cull for deer is the best due to all the acorns they eat making the meat fattier.

What's everyone else doing this year? Bonus points for recipes, basting brags and the like.

Rib of beef here. Stopped with the Turkey 2 or 3 Xmas' ago as was fed up having a tasteless meat that costs loads of money and have never looked back, wouldn't buy turkey again.

Will be making a maple glazed ham (gammon joint) tomorrow ready to accompany cheeses and for people wanting sandwiches that aren't beef from boxing day onwards.

Have had venison and goose etc in the past, but nothing beats good quality beef IMO.

Leg of lamb.

Like turkey at Xmas but as you say it's more suitable for numbers and soon gets boring after a couple of days if there's too much kicking around.

Making your own gravy is the business, but it's one of life's disappointments when it just won't thicken.

Rarely get to have lamb due to management not liking it, but hoping I can bring it back as the kids get old enough for curries and the like.


Took two days to do, and it went from well over two litres of stock to roughly 400ml of gravy.

Tasted sublime though.

Beurre manié is your thickening friend. Silky too.


Quite, a roux is one answer.

Another is to blend some of your mirepoix if using, or knock one up if not.

Or, as I am always an advocate of, especially for stronger meat: beef, lamb... a good dollop of blended caramelised onions thickens and adds a natural sweetness.

Always start your gravy off in the meat pan with water and flour, the flour will thicken it, if it still won't play ball then just reduce it.

If all else fails sling some gravy granules in it (but don't tell anyone)


Exactly my go to, never granules though! Some good advice in the following replies too.

Turkey.

Would like to have a crack cooking in the outdoor Smoker, but cant risk b#ggering it up and cant rely on the weather (to be sure it doesnt rain and screw up the Smoker.)

Also gammon/ham, pulled pork for Christmas Eve with lots left over. Loads of Bacun and Sosig stuff too. Just pick our meat for Christmas up, prices up considerably I noticed.

Will make my own chicken liver pate, normally quite nice.

De-boned and stuffed goose.

I normally do a 3 bird roast (all prepped by myself) but can’t be bothered this year so bought the above ready to go. No volunteers to do the cooking so this is the nearest thing to a year off from the kitchen for me.

I'm pescatarian and that sounds plain nasty. Surely a nut roast would be better.

Beef fore rib here as well, it’s a thing of beauty. Turkey is really pretty average, Did have Goose one year and that was good, but Beef is quicker, easier and tastes the best for me.

The only Muff in Town.

This year, that recipe goes only up the rear end, as one family member is gf; so gf sausagemeat, chestnuts & cumin / coriander / turmeric in ghe main cavity.
