I don’t know how people are able to do what they do in that world. Looks like a nightmare job to me. Poor pay, long unsociable hours. I know the famous chefs do well, but there’s only a few of those!

My stepdaughter's boyfriend is a chef at the Hilton (well, not THE Hilton, but a Hilton!). The hours are brutal, and since the pandemic there is unsurprisingly a recruitment crisis as loads of chefs found alternative, less unsociable employment outside the catering trade.

Friend has been head chef at a local pub for donkeys' years, loves it. The pub has a great food rep.

Different to town/city restaurants of course.
