So what is your go to bbq burger set up? Mine is 2 x decent quality burgers, grilled to have just a tiny bit of pink in the middle, decent slice of cheddar in between the two burgers to maximise the melt, chilli jam on the bottom of the roll, ketchup and gherkins on the top. I only started putting coleslaw inside the burger about 18 months ago, and it's quite simply the best. Try it, you won't be disappointed. |  |

What's your perfect homemade bbq burger? on 17:06 - May 22 with 597 views | Mullet | Beef = handshape patties, good quality bun, slow cooked onions (finely diced, low heat on a skillet, let the weight of the onions slowly steam them and make them sticky on the outside) smoked cheese slice, crispy lettuce and French's mustard. Keep it simple Pork = Bifana. Hammer flat the pork and marinade overnight in a spicy paprika based marinade, couple of bay leave and lots of chili. Mayo on a length of baguette or similar shaped roll. Red quick pickled onions (make the night before) Chicken = Shawarma. Toast and grind your spices, grate in some fresh ginger and crush some garlic. Let your thighs get nice and coated, add enough oil to lubricate. Wet your wood and skewer them on. Grill until cooked through, slice into pieces off the skewer. Toasted buns, hummus, small blob of pomegranate molasses, finely diced cucumber and tomato salad, Veggie = Halloumi. Take a small jar, 1/2 oil 1/2 lemon juice. A few leaves of fresh rosemary, thyme and oregano and a smashed clove of garlic. Shake until combined. Use to baste/marinade halloumi, slices of pepper on the grill (big mushroom optional) Add to bread of choice. Vegan = No. |  |

Also the type of coleslaw is important. Freshly made and not too much of it works. But when you're juggling it down your forearm etc. it's a definite no. |  |
