I was under the mistaken impression that she would be sourcing the ingredients and that you would be doing the cooking rather than you asking for ideas for someone else to cook!

Friends and family find it either baffling or amusing that (unless I'm out for the evening), I have Spaghetti Bolognese for dinner every Saturday night. Sunday mornings will involve sport for me, and I've just found it to be the best meal to fuel up.
There are a few nights of the week where I have the same meal without fail (Tuesday night is Fry-Up night ); just find it makes things simpler - less to think about for shopping and cooking. Does help that family all eat at different times most days of the week, so less need to coordinate.
Probably doesn't help you much with the OP question as a good Bolognese sauce takes about 4-5 hours, but nearly all of that is waiting time with a pot bubbling on the cooker and doesn't require any work on your part.
An hour to prepare, warm weather? Something with a nice salad? Smoked Salmon or some spicy chicken strips or something?

I'd go heavier with the eggs though, the more the better.

Not going to disagree with that, though the choice of tomatoes is going to make a difference, cries out for something more than the tasteless supermarket variety.

I'm genuinely not allowed to cook.
She suffers from Emetophobia, (fear of vomit), so she won't let anyone else cook, in case it's not cooked properly, and someone gets food poisoning.
I'm perfectly capable, lived on my own for years before I met her, never died, but phobias aren't rational are they?

I didn’t bother to post where it was because it was in Edinburgh.
Place was called Rustrums and I shared a mixed grill with my fellow diners followed by a Chili garlic lamb curry and a paratha.
I was so full at the end but it was so tasty I couldn’t stop eating it.
I'm sure I'm not the only one who is regularly in Edinburgh so worth a mention. That the one that is in or around haymarket? If so I've been and agree very, very good. Have a lot of veggie options too which is good for the other half.
Pretty sure I had the lamb tikka when I went if it's the same one.
