Feels like a TWTD topic, so what would everyone be?
I'd probably be a mild cheddar, as I'm not that interesting, but I'm also definitely not mature!
PS. Came about as the Bell foundry workers in this video get into the important topic while working (watch the video because it's interesting if you get time, but the cheese keeps popping up during the whole thing)

Traditional, solid, reliable, unimpressed with the woke nonsense of cheeses infused with fruit etc, unless it's Christmas time and you're hosting. Disliked by Herbivore, equally at home with a burger or jacket potato. Centrist of cheeses. Rolling eyes at the shouty vegan cheeses. Loves a crumpet. Considered uninspiring by some who claim they would only eat pule cheese made with milk from an endangered donkey fed only organic barley grown in the pristine mountains watered with the tears of angels.

Anyone caught with cheese infused with fruit will be spending ten years on the Chain Gang without trial when I’m made Emperor. There’s no excuse for that!
