How was the cake? So often I’ve had lemon drizzle cake and it’s too dry. It’s a bit of a rookie mistake as the drizzle should ensure it’s moist if applied at the right time and the cake isn’t over cooked. |  |

Make a syrup, cut the cake in half and dip the thing in the syrup.
Rejoin the pieces.
Drizzle what's left on top.
That's what I do, (have done rather) with an orange cake. Same thing.
Mind you, then I also filled the centre with cream so I suppose it's more of an orange gateau than a lemon drizzle cake.
