Now one thing I know is the moon doesn't shine, it reflects, so what we see is the moon surface lit up by the Sun.

So how come, if it moves into the Earth's shadow, we can still see it rather than it just disappearing from our view altogether?

The red light of the spectrum still gets through the earth atmosphere so that is what it is red and we can still see it.

I guess most people have seen what it looks like from Earth but here is how it looked captured by the unmanned Blue Ghost which landed on the moon earlier this month (only the second private spacecraft to do that).
