I've always been a cover the bread in cheese and stick it under the grill kind of guy, but today I toasted the bread in the toaster and added a nice mature cheddar at the end. Is this acceptable to not melt your cheese?

'Secret' family recipe......
1. Grate strong cheddar
2. Mix in salad cream and pepper (sometimes a blob of cream)
3. Toast bread both sides (second side lightly)
4.. Pile on to second side and grill
At stage 4, you could also add thinly sliced spring onions and/or tomatoes.

That reads like a hate crime, but If we're talking Frankenstien like creations I'll throw one into the mix that I did last year, it was delicious but felt so wrong so have never repeated.
