I've always been a cover the bread in cheese and stick it under the grill kind of guy, but today I toasted the bread in the toaster and added a nice mature cheddar at the end. Is this acceptable to not melt your cheese?
Toast one side under the grill, spread a thin layer of brown sauce lay cheese on top and melt cheese under the grill again. That is my preferred option.

- Toast one side - Flip and toast other side only until solid enough to hold cheese - (sometimes add thinly sliced onions and tomatoes) - Add slices of cheese and ensure hangs over the edge of bread so don't burn corners - When cheese has softened add Worcester Sauce and Tabasco - Crack pepper on full melt (the cheese not me)
One thing I think this thread has taught us is that if you're ever at another TWTDer's house, never accept the offer of cheese on toast. It's a minefield and likely to cause real ill feeling.

1) Cut two thick slices of crusty white loaf 2) Toast one side of each slice under the grill 3) Butter non-toasted side 4) Add grated mature cheddar, black pepper, and Worcestershire sauce 5) Grill until the cheese starts to brown 6) Enjoy
Swap out that Worcestershire sauce for some Hendersons and you've improved it tenfold!
