Twtd chefs - how do like yer gammon? 15:07 - Nov 4 with 1296 views | bluelagos | Wondering how to cook a gammon joint. Genuinely never cooked one before. Part boil then roast? Boil? Roast? I'll be eating some with some tats / veg - then leaving the rest for sarnies over the next couple of days. And tips?

Cross kitchen and press foot pedal of waste bin 4. Place gammon in bin and packaging in recycling [edit] Actually I do occasionally buy gammon and find it quite satisfying that it is a 'joint' of meat that will tolerate a moderate amount of grilling and come out decently. And having taking the healthy option I then add a slice of fried bread, a fried egg and some fried mushrooms from a frying pan with a touch too much oil to the dish... [Post edited 4 Nov 2022 15:23]

Then put back into a big pan and fill with pineapple juice, cinnamon stick, couple of bay leaves and then top up with cold water until it is completely covered, bring to the boil and then let simmer with the lid on for about 2 hours (working on the basis of a 2kg gammon). I would then prepare a rub that includes brown sugar, paprika, white wine vinegar, a little olive oil and some crushed garlic and give it a good mix together ready. Have the oven nice and hot, take the gammon out of the pan, score the fat then rub the mixture into the fat properly. Put into the oven for 30/40 mins and then leave to rest. Nice and easy but very flavoursome.

Or cut the leftovers and the pineapple slices into little square chunks and alternatively thread them onto cocktail sticks ?

I gather that recipe is known as 'trailer trash gammon'. Make of that what you will.
