But how does it work at this time of year, within the transfer window.. with new signings coming in and being available straight away, does the 25 man squad limit take a break during the window, and then have to be nailed down again after it closes?

Yes, 25-man squad doesn't count during January, so we can use everyone as it stands, but a new 25-man squad is submitted after the window closes. Window closes Monday Feb 3rd, incidentally, so new squad confirmed the following week, although in reality we'll know what it is anyway.

My understanding unless I am mistaken is that whilst the transfer window remains open players can be registered and deregistered on a match by match basis.
