So forget all the usual bollox, what things have you done, that literally blew your mind and reckon others would enjoy too. Not a look at me - rather a "you'd so love this" thread.
From me - if you genuinely enjoy hiking - and are fit - get to the Torres Del Paine in Chile. Really tough walking - but worth every second of effort if you get a sunny day / great view at the end...

Cycling and camping in Iceland on my own a few years ago was pretty special. Once past the tourist areas, just cycling through lava fields and spending nights in a tent on a landscape that looks like the moon was special. In general, getting out of your comfort zone I think is really important for folk, not only to test yourself but to reflect and get new perspectives on things. I dragged a mate who'd only ever been abroad once from Helsinki to Tromso on sh*tty bikes in August...he hated some parts of it but now reflects on the experience and is inspired to travel more.
A couple of years ago I met a scottish fella over here in Norway. He had recently got fed up with the rat race and so sold his home and his business in Australia, returned to his mother's home in Scotland and bought himself a cycle and a tent. He had cycled down to Dover and caught the ferry to France, then just took off. He had no idea where he was heading, and no idea how long he would be away, but he seemed really relaxed and happy. I wish I had the balls and the money to be able to do something like that.

After several weeks on a bike you wouldn't have the balls for long!

Didn't realise fergalsharkey had been based in Australia previously...

The friend who'd swallowed his tongue that I referred to in a previous post was a big fan of Iceland and spent some considerable time there doing similar to yourself (albeit sleeping in his specially adapted Landrover, which had one of those snorkel things for deep water) - he'd fully endorse your recommendation!
