Assuming he's walking the Silk Road to China and is prepared to take a detour off the route to Delhi (who wouldn't?), I'd highly recommend the Yin Yang restaurant in Kathmandu. We watched the rats playing just outside the kitchen when we were last there, but don't let that put anyone off, the food was amazing (genuinely).
