Today's guest ingredient: pesto

Warning: The following account describes some distressing scenes.

There I stood in my kitchen. Gochujang Paste jar, empty. So I looked in the cupboard and saw I had about eight 45g pots of Sacla pesto. I thought I would change things up today and use wholemeal pittas breads. So there I stood. Pittas, pesto and 50g(ish) of M&S extra mature 30% reduced fat cheese (the only reduced fat cheese I have ever had which tastes identical to full fat cheese IMO).

I spread the pesto on the lightly toasted pitta and grated the cheese. There it was. The big mistake which would take this endeavour from culinary masterpiece to utter disaster. As I spread the grated cheese around on the pittas the true horror of my mistake was soon revealed. Greated cheese, in the quantity I had remaining did not perfectly cover the pesto. What stared back at me was a yellow and green monster abomination. Don't worry, I told myself, the cheese will melt and it will cover the pesto. It did melt but it still came out looking like Norwich's hideous 1992 home shirt.

Lesson learnt: Only ever use those pre-cut slices of cheese when using pesto. Make sure they overlap and that the slices are thick.

Pesto cheese on toast is so good.

As you say, you need the whole bread and pesto covered though. Mozzerella is my choice with Pesto. Weak cheese I know, but lovely!

The concept of pesto and cheese is fine. Sort of thing you have on pasta with proper cheese, so the concept works.

You can get normal cheddar, 30% less fat, 50% less fat and almost fat free cheese.

30% reduced fat still has 70% of the fat. That is 24g instead of 34g per 100g. When it's melted I really don't believe anyone would be able to tell the difference (as long as it's good quality cheese). Therefore it seems a no brainer to me to cut some saturated fat out (I know there are some keto people on here, I don't want a debate on saturated fat).

I refuse to be judged by some cheese dodging heathen.
