I think that is the convention yes but actually there is no official FA rule on this.

Originally, a "hat-trick" was when a player scores 3 CONSECUTIVE/UNINTERRUPTED goals in a game, so would be awarded the match ball
Many players have scored 3 in a game, but frequently, other goals come between his 1st & 3rd
So it's the CONSECUTIVE/UNINTERRUPTED that makes it a "hat-trick" & therefore, worthy of being awarded the match ball
In the days before 'multi ball', I'm going to assume it was awarded to the 1st to reach his 3rd

It's more a symbolic thing I think Bellers. Final whistle goes. Hat-trick scorer goes to ref. Ref gives him the ball that was in play at the time. But yes, quite possibly the hat-trick was scored with three different balls.

Presumably no one else could score a hattrick after the player had taken the ball away anyway.

And consecutive deliveries bowled so the equivalent would be to score from 3 consecutive shots. Whether someone else had a shot in between would vary the type of hattrick.

It's more a momento now than the literal match ball isn't it? Now about 6 players could score a hat trick and all get a match ball.
