I'd never eaten roast potatoes thinking they need basting with marmite until a mate told me about it last month. A spoonful of marmite diluted with boiling water then brushed on the spuds for the last 15 mins of cooking. Beautiful.

That makes sense though, marmite adds a salty umami taste so would be great on roasties

Yes true but the acidity comes from the tomatoes hence why alot of sauces/ chefs add some sugar to cut through the acidity

Teaspoon of balsamic vinegar sets off a Bolognese sauce. Bit of the old acidic innit.

Tomato ketchup in curry bases as well. Never thought to until my Indian mate told me it’s commonplace, pretty much a staple ingredient in Indian / Bangladeshi cooking now (especially what we normally get over here).

I keep forgetting things, chicken livers if you can get hold of them.

Turn those into a paste and drop that in.

Near the end of cooking, add some fish sauce.

I'm not going to pretend this is my own recipe, but it's bloody good.
