Yes true but the acidity comes from the tomatoes hence why alot of sauces/ chefs add some sugar to cut through the acidity | | | |

Teaspoon of balsamic vinegar sets off a Bolognese sauce. Bit of the old acidic innit.
Tomato ketchup in curry bases as well. Never thought to until my Indian mate told me it’s commonplace, pretty much a staple ingredient in Indian / Bangladeshi cooking now (especially what we normally get over here). [Post edited 12 Oct 2023 20:19]
