Can rarely go wrong with tomatoe and chilli. I quite often add some chilli into tomatoe based dishes, not always to add heat but can add a bit more depth. The biggest thing of all though is to use home grown tomatoes and create sauces from them, it's like a massive leg up from the word go on the taste stakes. |  |

Some Italians can be terrible authentocrats about food. But food is invention, you can't preserve these things in aspic! How would you get to Ragu alla Bolognese, if some innovative 18th Century cook hadn't decided he fancied messing with the French classic Ragout?! [Post edited 13 Oct 2023 11:09]

I was too, tbf. But I'm also sort of fascinated by the whole "Italians outraged at food" thing. A food culture with almost infinite variety and now with this international stereotype as the most pedantic and closed off food culture in the world! (I sometimes wonder if Italians like it?
