When I was a kid vegetables on Christmas Day always included runner beans from my grandparents garden. Preserved in salt and tasting as good in December as in late summer.

These days you can get any seasonal vegetable , or fruit, anytime of the year which wasn't possible back in the day. Peru, Kenya, Morocco the world is your allotment.

If my grandmother was alive she would be nearly 140. Talking about lost skills. From what I remember she used a kilner jar, layered salt and cut beans, starting and ending with salt layer. Can remember she wrapped the kilner jar in brown paper, no idea why.

Trial and error is all I can suggest.

I'd advise against putting Al in your freezer , for all sorts of reasons.
