Well the solid bits were tofu, pak choi, some sort of Chinese spinach, a mix of weird oriental mushrooms, rice discs and some turkey. For the base I made it with turkey stock, chilli oil, spring onions, szechuan peppercorns, garlic, ginger, red pepper flakes and sh1t loads of crushed dried chillis. [Post edited 17 Dec 2021 19:31]

Wrong, so wrong. The sausages have to be traditional high quality (no ground bone, ligament shavings, mechanically recovered scrapings). The chipolata version, absolutely fine. It’s a broad sausage church. |  | |  |

Yeah, little rice discs, they are lovely. They come freeze dried and you soak them in water for a couple of mins and then just throw them in the pan for another couple of mins, they are a bit like stodgy chewy rice, really tasty I think and they add a different texture. It’s the first time I’ve attempted to make a Chinese hot pot but I was genuinely getting withdrawal symptoms. Next time I make a batch I would love to send you some as I would value your opinion, it would be an honour to see what you think. I have the cold boxes and I can put it on a 24 hour courier. If you would like it then just give me a nudge in the new year as I forget everything. I get the basics and fresh veg from and Indian / world store on Cavendish Street, it’s great and you can spend an hour in there. For the rice discs I found them in a Chinese store on Tavern Street. |  |
