Drain a can of chickpeas, put them in a bowl with a glug of oil and a good whack of smoked paprika, chilli powder, and cumin and give it a mix. Transfer them to a tin and roast them in the oven for about 40 minutes and serve in wraps with avocado salsa and salad (or other accompaniments you might fancy, sweetcorn goes nicely). The chickpeas work well on salads as well if you don't want the carbs from wraps. Chickpea burgers are also really easy to make. Just thoroughly drain a can of chickpeas and blitz it up with some spices of your choice and form into patties that you can then griddle or oven bake. [Post edited 20 Oct 2020 16:41]

Great in kedgeree, but that's fish. Works well with biryani or pilau but again eggs don't work on this thread. Back on track but again the Indian and pulses theme, a vegetable pilau with a good splash of dhal and chapati works wonders. 2 approaches with pilau: Either cook the rice first and cool it before adding the other ingredients. If you try to stir fry it when warm it will fall to bits and ruin. When cold the grains will stay intact when subjected to agitation in the pan. Or cook the lot together on the stove, adding the ingredients according to the time they need to cook through gently stirring them in as you go. |  |

Key things with rice: Wash it until you're bored and you won't go far wrong. You want to rinse it before cooking with cold water until the water runs clear. Cover with cold water, maybe the rice content and a half only. Put on fairly high heat with the lid on. Give it a couple of minutes tops, simmering, stir once with a fork and take off the stove. Keep the lid on and it will continue to steam itself. Obviously if it comes out a bit hard then you needed a splash more water. Too wet and you wanted a little bit less. Sometimes people stand there stirring it and turn it to porridge. Less is more. When adding items to rice, fold in carefully, rather than stir as such, to stop it breaking up. I hate seeing rice mistreated and know people who still pour boiling water over the cooked rice 1950s British style. |  |

My tried and tested technique for white rice is to weigh and rinse thoroughly then use double that amount in liquid. So for all four of us (2 adults & 2 toddlers) I do 250 grams of rice, then put 500ml of water. Bring it to the boil then cover. I usually stir once or twice when the water has almost boiled off. |  | |  |

The French just don;t get veggies / vegans at all in my experience. Mrs ullaa is veggie and several times we've gone into a cafe and asked for veggie options and offered chicken, cos as we all know, thats not real meat right? Maybe we just going to the very rural parts, but i'd say their reutation for good food is bollox - you get a better meal in most market town pubs. |  |
