The braised dish made of edible viscera is widely available throughout this nation of ours (except London, it would seem).
A version with sage and breadcrunb is in my opinion the finest haslet to be consumed.

Billy Bear meat is the preserve of truly distinguished gents.

Although I'd hate to visit the factory where those poor bears get their faces pressed onto the slicer. Harrowing. But, much like foie gras, I suppose the secret ingredient is cruelty.
