I'd certainly eat my moose steak medium-rare.
Tonight I shall be cooking a rare bavette steak with chilli roasted potatoes, portabello mushroom and a rocket and Parmesan salad.
No sauce this evening. If I am saucing then béarnaise is the king of sauces.

I'm a fan of homemade peppercorn sauce- it's ridiculously easy to make and has a lot more flavour than the packet stuff (surprise, surprise). But good steak is delicious on its own.
Fondant potatoes are a roight clarsy addition in place of chips. Peas are nearly always present too, love 'em. |  |

Always ask for Rare.. Though it often comes a little more done than that, though had quite the shock when I ordered a steak in France and asked for it rare.. They must have literally just chopped it off the bone and shoved it on the plate.

Medium rare,pan fried with oil added to the steak and seasoned well.
Tomato's and mushrooms(and asparagus when in season) which soak up and cook in the steak juice. English mustard on the side. Chips or jacket potatoes....job done. |  | | |
