In Leitrim everything tends to have potato in it or a side portion of potato. But I've been assured today's burritos are potato free. She knows burrito stuff and she's cooking. So would be foolish of me to demand the addition of potato

Had a burrito from Tortilla on Sunday. Large with double chicken, extra hot sauce, tomato rice, black beans, guacamole and lettuce.
Tried bubble and squeak but only had mash potato. Fried mash potato, with burnt bits, is the best and you haven't got all that nasty sprouts and peas to spoil it.
Don't believe a word I say. I'm only kidding. Or am I?

I would say Bubble and Squeak but IMHO it should be a full dish of it and not just a side.
I tend to cook it as a whole breakfast dish with all the leftover veg from a roast lunch including of course roast potatoes.
Importantly the contents should be roughly chopped and certainly not blitzed and absolutely must include sprouts.
If it is the leftover remnants from a chicken roast I might even add some stuffing — but no meat.
Completely agree with every single word here, in fact could have written it myself.
