Tofu is all about what you marinade it in.
Cut into decent sized cubes.
Marinade in Soy sauce, fresh grated ginger, garlic, chopped up chilli, lime juice.
(If you are feeling sassy, lightly dip them in tempura batter, then pan fry them.
Add to noodles.

Potatoes are the complete food, they provide all required nutrients except fat. A bloke lived on them for three months and then got checked over and they found he was healthy with nutrient deficiencies. So mash with butter you could live on quite happily.
This is also why fish and chips is the complete meal you could eat every day and nothing else. |  |

I live with a (pesky) Pesci & the idea of continually making 2 seperate meals for the both of us is deeply unappealing & time consuming.
Veggie lasagne, veggie chilli, veggie spag bol, veggie sheps/cottage pie, burritos/fajitas, curries.
All perfectly acceptable meat-fee meals. Occasionally we use soy products (fake mince, TVP, etc) - but mainly opt for vegetables like you. Aubergines are our only "no no". Bit gross.
I do miss meat in my spag bol- but there's no point making a massive vat just for myself. [Post edited 21 Nov 2017 16:07]

The best Fish & Chips I've ever had was at Andy's Fish & Chip Restuarant in Bogota, nice light garlic batter, light not greasy chips and fantastic fleshy fish. Never had anything anywhere near as good anywhere else.
Batter on the fish is usually greasy horrible muck and chips are usually as greasy.

The older ones amongst you might remember Sabatella's near the bottom of Orford Street, behind Coes. All the frying was done in beef dripping & tasted fantastic. Old man Sabatella had a hand chipper, he fed peeled spuds from a bucket into the machine with one hand, then pulled down on a lever with the other, the chips fell into another bucket under the machine. He did it so quickly, I never understood how he didn't chop off his fingers. |  |
