You'd think with the specific arm being the Department of Defense, they'd know what it is if it's some sort of new military thing (which I guess is what you're hinting at)?

In the same way, presidents often don't know a lot of things. Probably the most informed president was Bush senior and that was only because he was head of the CIA before he become president.

Oh I totally understand presidents not knowing everything. I've always thought they're little more than a figurehead. You certainly wouldn't want Trump knowing everything anyway!
But I really don't go with your first sentence. Yes there's likely stuff they don't know about in other departments, but not military craft such as this. That's their department!
Your last sentence is probably the closest to the truth (other than aliens!) Which is interesting in itself, if they've developed something with that speed and manoeuvrability.
What's also interesting to me is that no-one has said these videos could be fakes. So the belief is that this is SOMETHING (i.e. not some sort of camera trickery), we just don't know what.
Ex Blink 182 singer atom Delonge had a lot to do with this. His live shows became a bit much with him often ranting about government coverups and aliens before he launched an academy that has been investigating and pressuring governments to be more transparent about “alien” life forms. I think he’s seeing this as his first victory and opening it paves the way for more.
Some of his early work doesn’t sound so silly now...

I don't necessarily think they were dicking around I was just wondering why a lifeform capable of interstellar travel would come all the way here just to observe us (a relatively primitive species by their standards). Although we cannot comprehend their thinking so I'm just guessing that would take no interest in us the same way we take no interest of ants.
I think if they would wipe us out if they thought we were a threat.
On an unrelated note, something I can't help thinking about lately is the idea that once a lifeform becomes intelligent enough to upload their consciousness into a virtual realm, they can live in eternal bliss and would have no need for a physical body which is cumbersome. Maybe thats my inner nihilist coming out.
But most likely I think that intelligent life that manages to flourish long enough avoiding extinction events, and then becoming capable of travelling interstellar space, is so extremely rare that we will never come into contact with them.

Why on earth would an alien even know it got caught on camera gear? Why would they even conceive of 'camera gear'? They might have entirely different senses to us.
And who said anything about crashing in a desert? I assume you're talking about Roswell, which we weren't but anyway, is it not possible that even advanced civilisations still have accidents, particularly when voyaging to the unknown?

We don't take no interest in ants though. We study all creatures in the animal kingdom. Perfectly reasonable to assume a more intelligent race would check us out but do nothing more. Doesn't make for a great Hollywood movie, but there you go.
If they're a much more advanced race then it's unlikely we'd be seen as a threat, particularly as we don't have the ability for interstellar space travel. There's no reason to think they'd wipe us out any more than we'd have a desire to wipe out arctic penguins.
The fake eternal bliss life vs a real life, with all its inherent problems, has been done quite a bit, but an interesting topic nonetheless. I think I remember a study where most people would still choose the real life, but someone might correct me on that. I think it was that the struggle makes the good stuff more worthwhile. If everything was perfect that in itself would get boring. You need the bad to appreciate the good. Interesting topic though, might start a new thread on it.
Your last point is again a massive assumption. Races might be shooting about all over the place elsewhere in the universe and we're just in some remote outpost. Like Witham.
It might also be that with their technology we are observable from afar, so there's little reason to visit us.
