Great call on cauliflower, it's a brilliant veg that is incredibly versatile and tasty. I made a nice cauliflower 4-ways dish the other week which was very successful.
Love beetroot as well (pickled is especially good) but hard to overlook the potato given it's amazing versatility.
Purely for taste kalettes are superb. How can you beat a cross between kale and brussel sprouts.

I got a coupon from Sainsburys last year congratulating me for being the 4th biggest purchaser of onions from their Warren Heath store in 2019, so it should probably be them. Plus French onion soup is a delight
But it isn’t because onions are dull, so I’m going to say cauliflower
