The first time I went I was taken to a restaurant for a family meal and there were numerous plates of different things floating around. I tried to play it safe and opted for something I was told was chicken. First mouthful was full of gristle, so subtly spat it into a napkin. Second mouthful was the same. I then commented on how awful the meat was to my girlfriend, at which point she informed that it was meant to be gristle and that it's considered a delicacy. She thinks breast meat is the worst part of a chicken (I believe KFC burgers in China are made from leg meat as a result of this being a common opinion) and they fight over who gets to eat the neck. Part of me wonders whether they have been conditioned by their government to think the worst parts are actually the best parts and all the Communist Party elite are sitting back and enjoying the decent stuff. Anyhow, it probably works out well overall as it means we can ship all our disgusting offcuts to them in return for what we consider the decent stuff. [Post edited 20 Jul 2017 23:36]
