Market research 18:50 - Mar 10 with 5692 views | catch74 | So my pub has a decent garden - we’re set up to serve everything from the pub. We’re thinking of building an outside bar for obvious reasons in the current climate. Anywhere anyone’s been offering something special/ something really enjoyed - food and drinks. Could go pizza oven - but quite a few pubs round here have done that already. Burgers/ Paninis/ kebabs or home made ice cream stall.

Market research on 19:28 - Mar 10 by jeera | "we’ve fought off a number of the locals who thought they owned the place previously." Interesting line. A previous local of mine went through numerous owners who couldn't make it work despite some fine efforts and an excellent plot. I tried to point out the problem in my opinion was the locals thought it was their pub and that outsiders were put off. It's all very well *so&so* coming in and sinking half his wages each week in Stella, but that family who just walked out the door because of his swearing were about to order a Sunday lunch for 4. Some landlords might look at Mr Boozy as their bread and butter but personally I reckon there's more long-term prospect in getting that food on the table and making that work. |
Marco Pierre White stopped selling lager & cider at The Angel in Lavenham to discourage the local boozy blokes from clogging the place up. He didn't last.

Give me a shout whenever you want. I have a fair few connections up there, in fact at one point I considered doing something in Ipswich and a friend said he could definitely sort me a chef out. You would need to fit a proper Indian kitchen in but I seriously think you could be a sensation in your area. Don't mess about with an outside kitchen though, just go the whole hog and completely change your kitchen and food. People would really travel for that. When this is over it's worth travelling to West Bromwich or Brum to check some places out to see what and how they do it. Hen and Chickens and New Soho Tavern are another couple in Birmingham worth checking out. Seriously worth a think.

He didn't last for several reasons though and he was heavily criticised for not showing much interest beyond its initial opening. I started using it only an owner or 2 after he had left and it was still very nice in there. I know the present owner quite well but it's a very different place now. This guy wanted a pub, gradually changing the place to a more down to earth approach and that includes the menu. In truth, I preferred it being a bit nicer but there you go. With The Greyhound upgrading and outpricing itself to many residents, an opening did appear to be fair. Heck knows what The Cock Horse is trying to be.

Pork scratchings and pickled eggs, sorted. (n/t) on 19:39 - Mar 10 by Dubtractor | I bloody love a pickled egg in a pack of crisps. Has to be properly pickled though, ideally going a bit brown. |
...a salt & vinegar man, when it comes to the egg accompaniment? Personally I'm S&V, but it's a very debatable subject down my local.

Maybe catch can do you one around winter time? If he has the facilities to do a German style Christmas market type thing, hogroast, bratwurst, lager. Winner. [Post edited 10 Mar 2021 19:54]

Market research on 19:32 - Mar 10 by hoppy | Outside bar, serving Away Days beer (as it's away from the main bar...!!) Pizza oven would work well with your garden setting, but so would decent BBQ/paninis/burgers. I thought it was a really nice pub when I visited, to be fair, so anything that is an added value like that would just add to the offering you have, and not just limited to covid restrictions. |
Thanks Hoppy, hopefully catch up when this is all over.

Market research on 19:36 - Mar 10 by Mullet | Especially if your bar money goes to Adnams and their ilk and food goes in your profits. That's the future of pubs and has been for donkey's years. The days of blokes sat there supping several times a week is long dead. I guess if you have pool/darts and screens and a rotating set of scenes and clubs passing through you'd do well but that's a lot of plates to spin compared to decent grub and service. |
It used to be a pub thriving on pool and darts teams and the like and did ok in those days. But as you say, times have changed and the money isn't enough for only that side anymore. One lot tried to extend the pubby approach by keeping those things going and also introducing Sky! So then it was a football pub too, but at a cost of approx £650 per month for the Sky alone it was an impossible thing to keep up. They and subsequent owners then tried the family pub/food approach alongside it and it just doesn't work. This family walks in for dinner, respectable types with 2 little girls in white socks and pigtails... And at the bar there's the local thug who is shouting at the ref on the TV, only 2 pints away from wanting to fight someone. You gotta pick your target audience and go for it.

Market research on 19:41 - Mar 10 by Coastalblue | If things open up, and if we have a nice summer, and if you think you'd want to cater for it, would anybody else be up for a TWTD beer garden afternoon? Most of us would have to travel, but that would either meankeeping it sensible, which I'm sure Catch would appreciate, or staying somewhere local? I'd be up for that, either staying locally or even going for the day and soft drinking it. Would need Catch to be OK with it of course. |
All good with me, I’d whack a couple of TWTD favourite barrels of ale up for everyone in the garden, help yourself - then I can join in!

So are you a destination (people drive) or walk in? One think I'd be doing would be weekend bbqs and or a roast hog. Get people sat down, drinking for the afternoon. If you go posh/gastro style grub, not sure there's enough in it this summer. The summer is going to be all about outdoor eating/drinking so why not embrace it. Ice creams and/or ice creams drinks? I know Baileys used to do a machine for Bailey Ice cream which has always been popular when Ive seen it.

The hog roast I think would tempt plenty, thanks Lagos - there’s a local company that will make any flavour ice cream or we sometimes make our own - could try pickled egg flavour! I guess we’d be classed as a gastron pub - but you’re definitely right, it’s all going to be about outdoor fun and games.
