I'm cooking tomorrow for the lovely lady in my life. We've been together 11 years and she's recently gone veggie not vegan so dairy is fine does anyone have any bright ideas. I'm competent in the kitchen but feel oddly stumped.

You could do something with a nice creamy sauce, like a vegetable moussaka or lasagne. Maybe with courgettes. Relatively straightforward to do.

My other half is veggie and I do most of the cooking, while it may not be the greatest product these days Quorn has a really good range of recipes on their website and you can turn out a very pleasing lasagne, chilli or a number of other options using a bag of quorn mince.

If you want to go simple or casual then Beyond burgers are very good and it's hard to beat a red lentil dahl to be honest, either for taste or for ease of cooking.

No idea when I began here, was a very long time ago. Previously known as Spirit_of_81. Love cheese, hate the colour of it, this is why it requires some blue in it.

I'm about 90% vegetarian now (still like the occasional chicken curry or seafood paella) but my wife is a proper "meat on every plate" Zimbabwean...

The only veggie meals she doesn't complain about are caponata or a black bean and sweet potato chilli.

The chilli only gets a pass as our two year old loves black beans!

If you have a a decent go-to chilli recipe swap out the mince with tinned lentils, ideally the smaller black ones like puy

That's the only change you need to make, the consistency is essentially identical, you keep the same flavours and you don't have to use ultra-processed vegetarian meat substitutes like Quorn etc

The same principal also applies for lasagne

You can substitute lentils for mince in pretty much anything, so shepherd's pie, lasagne, chilli, bolognese etc. Plenty of herbs, garlic, tomato puree. Jobs a good'un.

I regularly do one with finely chopped aubergine, courgettes, onions, a finely grated carrot, some dried or a tin of green lentils, black beans + any other sort (kidney, borlotti, etc). Chopped or pulped toms and tomato puree. Plenty of seasoning with a veggie stock cube (or beef if you’re not worried about it being non-veggie), smoked paprika, cumin, Worcestershire sauce, splash of balsamic, stir a bit of lemon juice through at the end. Kids love it and it can be spag bol alternative, chilli, burrito. Great for big batches. Freezes well.

A hard agree on not using quorn/other processed meat substitutes. You don’t need it in veggie cooking - the veggies should be the star.

These veggie/vegan substitutes are a concern with all the dodgy ingredients they're pumping in. Meat is actually healthier but of course if people have a moral objection to meat it's an issue

I was veggie for a year, more for health reasons and it was only ever going to be for a year but I did everything I could to avoid them and as you say, made sure the veggies were the main ingredient

But my cheese intake probably increased one hundred fold so in the end it wasn't very healthy for me at all
