If you want to go simple or casual then Beyond burgers are very good and it's hard to beat a red lentil dahl to be honest, either for taste or for ease of cooking. |  |

I regularly do one with finely chopped aubergine, courgettes, onions, a finely grated carrot, some dried or a tin of green lentils, black beans + any other sort (kidney, borlotti, etc). Chopped or pulped toms and tomato puree. Plenty of seasoning with a veggie stock cube (or beef if you’re not worried about it being non-veggie), smoked paprika, cumin, Worcestershire sauce, splash of balsamic, stir a bit of lemon juice through at the end. Kids love it and it can be spag bol alternative, chilli, burrito. Great for big batches. Freezes well. A hard agree on not using quorn/other processed meat substitutes. TBF that sounds delicious These veggie/vegan substitutes are a concern with all the dodgy ingredients they're pumping in. Meat is actually healthier but of course if people have a moral objection to meat it's an issue I was veggie for a year, more for health reasons and it was only ever going to be for a year but I did everything I could to avoid them and as you say, made sure the veggies were the main ingredient But my cheese intake probably increased one hundred fold so in the end it wasn't very healthy for me at all |  | |  |

Gonna continue shilling Kenji here https://www.seriouseats.com/be This is a bit more involved due to some of the ingredients being hard to come by in the UK but it's worth the effort and you get so many portions out of it. |  |
