Life is going to be a bit different this year. More time to do stuff for me and I intend to use it well and do some trips.
I will be heading to Hay on Wye which is a wonderful place to sit around, buy books, and visit a nice pub or two. And if the weather is ok, perhaps toddle up a mountain. One of the places I am at my most content. I would do an Ipswich trip with an evening in the Briarbank and Salthouse. But I wont be able to get a ticket for a game so that option isnt on this year.
I will definitely have a few days in Prague. The finest cold beer. Unusual food, beautiful clean safe city etc etc. Love it there.
I was thinking of Bruges but it seems a pain to get to.
Any interesting suggestions? Nothing too extravagant. Looking at long weekends, short break type stuff. UK is fine too- but ther eneeds to be stuff to do / visit and good hostelries...

I did Eurostar to Bruges (via Brussels) and it was simple enough. Beautiful place though and fits all of your criteria so would recommend doing it.
Of the away days done this season I quite liked Brighton as a spot to go back to - some quirky pubs, arty scene and obviously a nice beach. Did help that it was a sunny day but could have a lovely time there. |  | | |

Bruges is dead easy in the car. Take LeShuttle and turn left at Calais, it's an hours drive. Lovely place, I'd highly recommend it. | | | |

It's good but it's no Glasgow...
Although if it is a quieter set of pubs, restaurants and sights you are after then consider Hexham, Durham and Skipton. [Post edited 5 Feb 9:32]

I agree about Lake Bled including the island in the middle, although I imagine it's much busier these days than when I visited in 1981, Yugoslavia (then communist) being covered by Interrail. |  | | |

I've done a few city breaks over last couple of years -
Krakow is a great city - local food and drink is really good and very cheap (also obviously got the historical elements of Jewish Quarter, Schindler's factory, Auschwitz etc)
Budapest was good -- not quite as cheap but so much to see - (especially as planning restrictions mean no mega tall buildings) - can walk around so much - river tour on boat was well worth it
Dublin - controversial - thought it was overrated and pretty expensive
Edinburgh - I've always loved - got lucky with reasonable weather so walking around was pleasant - lots to see and do
Santorini - went for a wedding but stunning scenery, brilliant weather and wasn't that expensive to eat and drink
Got Berlin booked for April - also going to spend a few days in Bristol or Bath - want to try Slovakia or Slovenia but not done any research

Take the TEZ railway from Poprad train station up into the Tatra Mountains.... delighful

Have to agree about Norwich, staying well clear of Carrot Road, but the area around the cathedral, along the river, tomb lands, is full of decent little pubs, coffee and independent shops. |  | | |

The bus journey from Poprad down south to Revuca is one of the most wonderful experiences
Two hours travel through the mountains....
Not that much to detain you in Revuca..... but I think there is an onward connection south into Hungary | | | |

Wild Atlantic way is a great suggestion. Especially if you just cut to the chase an go straight to sligo/Leitrim  .

If you like the outdoors, Stavanger in Norway is well worth a trip.
I did a trip there over a weekend a few years back when Kieffer Moore was at Viking FK. Direct flight over, grabbed a hire car then went down the Lysefjord on a car ferry and did the world famous Pulpit Rock hike before camping on top. Next day back to the city, look around and then watched Viking play in evening before flying back the following day.
Price of a pint is London prices as a heads up, but plenty of places to grab a beer and food that won’t break the bank.

It's quite touristy now, particularly the town, but not overwhelmingly so. Busy but not as busy as I expected on a weekend during peak season. The scenery is just as spectacular though! Normally places look better in the pictures than in real life but this was the other way round - no matter how hard I tried I couldn't get a photo that did it justice! | | | |

But bear in mind the main-line rail station is some distance from the town at Kutna Hora. Take the light railway which runs near Sedlec Ossuary and on to the centre.
Cesky Krumlov (historic town and castle) also well worth a visit.
