Should it be a dollop on the side of the plate, that you dip into as required, or drizzled all over the food?

It depends on the food and the mood. For fish and chips, a puddle on the side for dipping is mandatory. For chips alone, ketchup drizzled is allowed, providing salt and vinegar is dispensed first. Sausages, split the sausage lengthwise and dispense in the gap. Burgers - a burp on the burger or on the bun on the non-cheese side. Bacon and a full English - puddle.

My mum used to do refried potato or mash potato if she was doing bacon or sausages when I was a kid. Refried potatoes cooked in Trex (basically lard) with a burp of ketchup was food of the gods.
